Corn Fritters

Ingredients
2 c. white flour1.5 c. skim milk2 eggs3 tbsp butter, melted1/2 tsp baking soda1 tsp baking powderdash salt1 c. canned sweet corn1/2 c. cheddar cheese, grated1/2 c lean ham, chopped (can use deli meat)1/2 medium onion, chopped finely
Directions
Mix together all dry ingredients, add butter and milk, mix thoroughly.
Add ham, cheese, corn and onion. Mix well.
Grease hot griddle with some of the butter or use pam style spray.
Use 1/4 cup measuring cup to pour onto griddle/frying pan.
Cook until golden on each side, much like pancakes.
