Charro Beans

Ingredients
1 lb bacon, minced2 large onions, diced1 head garlic, minced4 serrano peppers, minced2 lb bag pinto beans, soaked1/2 gallon chicken stock2 bottles regular beer (NOT light)1 bunch cilantro, choppedwater
Directions
Mince onion, garlic and peppers in food processor.
Mince bacon, fry in stock pot until not quite crispy. Add onion/garlic/peppers, cook @ 5 minutes more. Add beans, chicken stock, beer, oregano and cumin. Add water to cover beans plus 1 inch. Simmer on low heat 1-1/2 hours until beans are cooked, not mushy. Add water if necessary. Add cilantro and simmer 5 more minutes.

    Cilantro comes in a 'bunch", like parsley. Use as much or as little as you like. Stems can go in too.
