Chicken Frittata (South Beach P1)

Ingredients
* Canned Chicken breast, 25 oz * Egg beaters 2 cups * Yogurt, plain, skim milk, 2 tbsp * Saffron, 1 tsp * Onions, raw, 2 medium sliced * Olive Oil, 2 tbsp divided
Directions
Saute the onions in 1 tbsp oil until caramelized.
Let cool.
Mix all remaining ingredients except oil with cooked onions
Heat oil in 10 inch skillet.
Pour chicken mixture into skillet and spread evenly.
Cook on medium heat until browned.
Cut into quarters and flip each quarter.
Cook until browned on other side.
Cut each quarter into 2 wedges.
