Polenta French Toast

Ingredients
2 quarts vanilla soy milk2 tablespoons soy margarine (Earth Balance) plus more for sauteing2 cups coarse stone-ground yellow cornmeal4 tablespoons maple syrup1/2 cup golden raisins
Directions
Bring soy milk and Earth Balance (or margarine) to a boil in heavy medium saucepan, slowly whisk in cornmeal and stir constantly for 8 to 10 minutes until mixture is thickened and starts to pull away from sides. Add maple syrup, stir until combined, then add raisins. Pour into an 8 1/2 x 4 1/2 ince loaf pan. Fill to the top then discard any excess. Smooth top with spatula and place in refrigerator until chilled.

Invert pan onto cutting board and slice polenta into 16 wedges.

Heat a griddle or cast-iron pan. Add more Earth Balance or spray pan with nonstick spray and saute wedges until golden brown on both sides.
