Amanda's huevos rancheros

Ingredients
1/2 cup egg beaters1/2 cup black beans rinsed3 TBSP of salsa (I use store bought)1/8 cup of reduced fat shredded cheddar1 corn tortilla 6"1 TBSP reduced fat sour creamHot sauce (optional: I use chulula)
Directions
This is a single serving recipe. I make them indiviually for each member of my family, but I don't see why the recipe can't be multiplied.

Throw the tortilla in the oven and turn it on 350 degrees.
In a pan ( I coat mine with cooking spray) scramble the egg beaters.
when almost done, add black beans and salsa. Cook until completely warm. Add cheese.
Take out your corn tortilla before it burns. Place on plate and dump contents of pan on top of the tortilla. Add the sour cream and hot sauce (if desired). Enjoy
