Shrimp in Saffron Broth

Shrimp, cooked, 6 oz Onions, raw, 1 small Garlic, 1 clove Zucchini, .75 cup, sliced Peppers, sweet, red, raw, sliced, .75 cup Swanson Chicken Broth 99% Fat Free, 2 cup Saffron, 1 tsp *Brown Rice, long grain, 1 cup (basmati preferred)Olive Oil, 2 1tsp
Saute veggies and garlic in olive oil to desired bite. Boil broth with saffron in separate pot. Add in shrimp and cook until done. Put 1/2 cup brown rice in a wide soup bowl or pasta bowl. Cover the rice with the veggie and shimp mixture then pour 1 cup of broth over each bowl.
Garnish with chopped italian parsley and fresh cracked pepper.
