Ingredients

1 1/2 pound cod or devilfish
1 cup tomatoes
1 onion
1 garlic clove
2 shallots
A handful of fresh tarragon
Dash of cayenne pepper and saffron
Salt and pepper to taste
Directions
1. Cut the fish into small pieces.
2. Sautee the fish quickly until it is golden brown; add the shallots, diced onions, the clove of garlic, the tomatoes (peeled and with the seeds removed). Add the salt, pepper, and spices. Simmer without the lid for about 40 minutes.
3. Add the tarragon just before serving.
