Red Curry Chicken

Ingredients
Peanut Oil, 1 tbsp (remove)Chicken Breast, no skin, 16 ounces (remove)Garlic, 2 cloves (remove)Onions, raw, 1 cup, sliced (remove)Thai Kitchen Lite Coconut Milk, 14 oz (remove)Red Curry Paste, 1 tbsp (remove)*Fish Sauce, 1 tbsp (remove)*Coriander seed, 2 tsp (remove)2 cups brown rice
Directions
Brown chicken and garlic in peanut oil. Add onion and cook until clear.

In a pan, combine and bring to a simmer:
coconut milk
curry paste
fish sauce

Add chicken and onions and simmer for 15 minutes.

Garnish with coriander.
