Moroccan Chicken Stew

1 1/2 Teaspoons Veg or Canola oil1 lb Boneless Skinless Chicken Breast, cut in pieces1 cup large onion, chopped3 cloves garlic, minced1/2 tsp Salt1/2 tsp Cinnamon1/2 tsp Ground Cumin1/2 tsp Curry Powder1/2 tsp Ground Ginger1/2 tsp Crushed Red Pepper14 oz. (1 can) Stewed Tomatoes, undrained3/4 lb (2 med) Potatoes, cubed1 cupped (3 med) Carrots, sliced1/4 cup Raisins1 Tbsp. Lemon Juice
In a large saucepan, heat oil over medium high heat. Add chicken and brown on all sides (approx. 8. mins). Remove and set aside.
In same pan, saute onion and garlic until tender. Stir in all the seasonings. Stir approx. 30 seconds until fragrant.
Add tomatoes, potatoes, carrots, raisins. Heat until tomatoes just come to a boil.
Return chicken to pan. Cover tightly, reduce heat & simmer 45-55 min. or until vegetables are tender.
Stir in lemon juice right before serving.
Makes 4 servings. (1 - 1 1/2 cups each)
