1 cup julienned peeled jicama1 cup baby spinach leaves1 c thinly sliced red onion2 large Navel oranges, peeled and cut crosswise1 T jalapeno pepper (or more)1/2 c chopped fresh cilantro leaves1/3 c olive oil1/3 c orange juice1/4 c sherry vinegar1/2 t ground cumin1/2 t ground corianderHot sauce to tastePepper to taste
1. Stir oil, OJ, vinegar, 1/4 c cilantro, cumin, coriander, hot sauce, and pepper in small bowl
2. Combine onion, jicama, other cilantro, jalapeno, and spinach in large bowl.
3. Layer orange slices and salad on individual serving plates and drizzle dressing on top. (Note: for lower fat and calories use only 1/4-1/2 dressing).
