8 oz ground turkey1 green pepper, chopped1 large onion, chopped26 baby carrots, cut in two1 1/2 c broccoli florets1 can chicken broth - 14 oz1 large can whole peeled tomatoes - 28 oz1 jar meatless spaghetti sauce - 26 oz 1 can cannellini beans - 15.5 oz1 can cut green beans (14.5 oz)1 can white corn (15.25 oz)1 T. sea salt1/2 tsp coarse ground black pepper1/2 tsp crushed red pepper1 tsp basil1 tsp paprika
Makes 16 cups of soup, about 100 calories per cup. Brown turkey with chopped onion and chopped green pepper until turkey is cooked. Add salt and spices - cook and stir 3 min over medium heat. Add liquid from tomatoes, beans and corn along with spaghetti sauce. Adjust heat so that liquid mixture starts to boil gently - add carrots and cook 8 min, add broccoli florets and cook 3 min, add tomatoes, beans and corn, heat through, stirring. Turn heat off so vegetables don't overcook.
