Goat Cheese and Tomato Omelet

Ingredients
2 whole eggs whised with 1 TB skim milk1 plum tomato, chopped1 oz crumbled goat cheesenonstick cooking spray
Directions
Heat a nonstick skillet coasted with nonstick cooking spray over medium heat. Add the whisked eggs and allow to cook for about 2 to 3 minutes. then add in goat cheese and tomatoes; fold over into omelet. Allow to cook an additional 1-2 minutes.
