Sweet Potato Breakfast Skillet

Ingredients
8 oz turkey breakfast sausage1 med onion, diced2 large sweet potatoes, peeled, quartered, sliced1 med apple, peeled, cored and diced1 Tbsp canola oil1/4 tsp kosher salt1/4 tsp freshly ground black pepper or to taste1 tsp fresh minced rosemary3 large eggs, beaten (I use Omega-3 eggs)
Directions
Brown turkey sausage and onion. Add sweet potato slices along with 2 tsp oil. Cover and cook over med-hi heat, removing cover and turning regularly, about 10 min. Add the apple and seasonings. Cook until sweet potatoes are done, turning as necessary. Move mix over, add last tsp of oil and beaten eggs. Scramble the eggs, mix thru the other ingredients, serve hot.
