Hamburger Veggie Stoup (one cup serving)

Ingredients
1 lb ground round1 white onion, chopped1 can Hunts spaghetti sauce, Mushroom1 cup green beans1 cup corn1 cup baby carrots, sliced1 cup peas1 cup mushrooms, sliced1 tsp. Splenda brown sugar blend2 tsp. vinegar1/4 cup ketchup1 tsp. black pepper (more or less to taste)1 tbsp. Italian Seasoning, or to taste1 can beef broth, reduced sodium
Directions
Crumble ground round into fry pan, add chopped onion and cook until ground round is no longer pink and onions are soft. Drain. Add all ingredients to crock pot and cook on low 4-6 hours.

This freezes well. You may also add 2-3 red potatoes if desired, but from my understanding, potatoes do not freeze well. It changes the texture when thawing out and reheating, so I just omit.

    i really like this one it is so vegetably as we need more of this type of meals in our diet - 1/5/09
