Ingredients
One Ampalaya (bitter melon)3 ounces Coconut Milk2 tsp Soy Sauce3 tbsp Oil (Olive or Canola)
Directions
2-4 Servings, depending on size of Ampalaya (bitter melon)

Preparation:
Wash and lightly scrub outside of Ampalaya
Cut Ampalaya in half
Remove seeds and pulp
Cut into 1/8-1/4" thick wheels or chunks
Heat oil in skillet with medium-to-high heat

Cooking:
Place cut Ampalaya (bitter melon) in oil
Fry until cut portions begins to brown
Add Coconut Milk
Reduce until Coconut Milk thickens
Reduce heat, add Soy Sauce
Heat until sauce is creamy

Serve ampalaya with eggs, rice, and hot chili sauce as a traditional Philipino breakfast.
