Light Meatball Stroganoff

1 Lb. 93% Lean ground meat2 Tbsp. olive oil1 small onion, chopped (about 1 cup)2 Tbsp. all-purpose flour1.5 cups beef broth1/4 teaspoon black pepper1 tsp. Worcestershire sauce 1.5 cups sliced mushrooms1/4 cup sour cream
Makes 4 servings.
Form meat into small meatballs. Heat olive oil in skillet and brown the meatballs on all sides. Remove from skillet and keep warm. Add the onion to the skillet and cook until tender and lightly browned. Add beef broth, stirring, and cook until slightly thickened. Add pepper, Worcestershire sauce, and mushrooms. Cook until mushrooms are tender. Stir in the sour cream, and add meatballs. Cook until heated through, but do not boil. Taste and season to your liking.
Great over whole wheat pasta.
