Indian Stuffed Artichokes

Ingredients
2 Large Artichokes8-oz ground turkey1 med onion-diced8-oz mushrooms-chopped1-Tblsp Curry Powder1/4 tsp cayenne pepper or indian chili-or more to taste1/2 cup Chicken BrothSaltPepperChopped cilantroNon-fat plain Yogurt3/4 cups Basmati Rice
Directions
Trim artichokes and steam until cooked-30-45 minutes depending on size.
Allow to cool about 10 minutes then remove choke from the center.
While artichokes are cooking prepare filling.
Saute onions in 1/4 cup of Chicken Broth until translucent, add in mushrooms and cook until the liquid evaporates.
Add in the ground turkey, remaining chicken broth, and all spices, cook well. Mix in rice.
Fill each artichoke with 1/2 the turkey mixture garnishing with the cilantro and yogurt. Serve with rice.
