Stuffed Pepper Casserole

Ingredients
most of a package of Dole cole slaw blend1 lb ground beef 1/2 cup onion (cut up) 1 green pepper (chopped) 1 tablespoon cooking oil 1 teaspoon salt 3 tablespoons uncooked rice 1 (10 1/2 ounce) can condensed Healthy Request tomato soup 1 (8 ounce) can tomato sauce 3/4 cup water
Directions
Brown beef in oil with onion, pepper, salt and rice.

Spread slaw on the bottom of a casserole dish. Top with beef mixture.

Combine tomato soup and water then add tomato sauce. Pour over top of casserole.

Bake for 60 to 90 minutes at 350.

    I have made this several times. My husband and I both love it. I use about 1/3 cup of brown rice because we both enjoy rice. I just add a little more water to it to help keep it from becoming dry from the extra rice. This will definetly be a regular at our supper table! - 7/15/09

    unfortunately I was not impressed with this....i found it pretty bland, and my rice didn't cook well..... i may try it again with pre-cooked rice, and more of it then just 3 tbs...also I think it needs more green peppers .....also, the cole slaw was odd, though not bad, it tasted more like saurkraut - 1/31/09

    Sorry you didn't like it. I'm sure your changes will improve it to your liking. I stick to small amounts of rice, because I keep things as light as possible. If not for DH, I wouldn't put in any rice at all. :)
