Chocolate chip (with tofu!) cookies, wheat free

1/2 block soft tofu3 oz fat free cream cheese1/3 c peanut butter1/2 c brown sugar1/4 c molasses1 egg2 tsp vanilla1/2 tsp salt2 1/2 c oat flour**1/2 c oatmeal1 t baking soda3 oz chocolate chips**Oat flour can be made by pulverizing dry oats in a blender or food processor
Cream together tofu, cream cheese and peanut butter until smooth.
Blend in molasses, egg and brown sugar, scraping bowl to ensure even mixing. Add vanilla.
Carefully add oat flour, oatmeal, salt and baking soda. Mix until evenly blended.
Stir in chocolate chips.
Drop in spoonfuls onto cookie sheet (parchment paper is a nice touch if you have some). These cookies tend to grow upwards, not outwards so they need not be spaced far apart.
Bake at 375 for 12 minutes.
Makes 4 dozen cookies (2 to a serving)
