Salmon with Lentils

Ingredients
1 c. dried lentils1 small onion, chopped1 each carrot and celery rib, chopped2 Tbsp. red wine vinegar1 Tbsp. olive oil1 Tbsp Dijon mustard1 garlic clove, minced1 lb salmon fillet
Directions
1.Heat broiler. In med. saucepan, combine lentils and 3 c. water. Bring to boil over high heat. Reduce heat to low, cover and simmer 5 minutes. Add onion, carrot and celery; cover and continue cooking until lentils are tender about 20-25 minutes. Drain, reserving cooking liquid.
2. In small bowl, whisk cooking liquid with vinegar, oil, mustard and garlic. Toss lentils with half of dressing.
3. Season salmon with salt and pepper (optional). coat baking pan with nonstick spray. Place salmon, skin side down on prepared pan; broil until salmon is cooked through, about 8-10 minuted. divide lentil mixture among 4 plates. Flake salmon on top of lentils and drizzle with remaining dressins.
