Low Fat Chicken Spaghetti

Ingredients
*2 boneless, skinless chicken breasts - baked then chopped into bite-size pieces.*1.5 cups chicken broth*1 can Campbell's Healthy Request Cream of Chicken Soup*1 can Campbell's Healthy Request Cream of Mushroom Soup*1 tsp olive oil*1 medium onion, chopped*1 green bell pepper, chopped*1 can chopped green chiles*1 can sliced black olives*1 2 oz. jar pimentos*1 package Barrilla Plus Multigrain Spaghetti*salt and pepper to taste
Directions
yield: 8 servings.

Season chicken to your liking and bake at 425 degrees for 20 mins, or until juices run clear. While chicken is cooking, saute onion and green pepper in pan with olive oil until translucent and soft (to minimize calories and maximize coverage, use olive oil sprayer). Add broth, soup, chiles, olives and pimentos to pan and let simmer. Cook pasta according to directions on package, drain and toss with small amount of olive oil to prevent sticking. Set pasta aside. When chicken is finished baking, cut into bite-size pieces and stir into soup mixture. Layer pasta and soup mixture in 9x13 baking dish. Top with cheese and bake for 30 mins at 350 degrees, or until cheese is fully melted.

    Three words...Mmm Mmm Mmmm. Simple to make. Added mushrooms and substitutued pimentos for a handful or so of chopped mild pepper rings. Definitely will add the to my regular menu. - 7/10/11
