Tzatziki Sauce

Ingredients
Directions
Yogurt, plain, low fat, 1 cup (8 fl oz) 1 Cucumber (peeled and seeded)Olive Oil, 1 tbsp Lemon Juice, .5 lemon yields Dill weed, dried, 1 tsp Garlic, 3 cloves Salt & Pepper to taste
Drain yogurt in cheesecloth (or use a couple coffee filters if you don't have any cheesecloth on hand)
Shred Cucumbers and place on paper towels to dry
(both of the last 2 steps take a couple hours to drain completely, skipping these steps will make your dip runny and seperate)
Mix together all ingredients and allow to chill for an hour, or overnight for best results
Makes about 8 servings of 2 Tblsp
