Tilapia Tacos

Ingredients
2 Tilapia Filets (about 4 oz ea.)1 cup fresh diced tomato1/2 cup diced onions4 T. minced cilantro leaves1/2 lemon (freshly squeezed juice)4 corn tortillas1 T olive oilSalt /pepper to taste
Directions
In a small bowl mix the tomato, 1/2c onion, cilantro, & lemon add salt to taste. In a Skillet heat the olive oil at a medium temperature. Add the tilapia filets and cook for 2 min. Flip the tilapia over add 1/2 c. diced onions to the skillet and cook for 2 min. Remove from heat. Break up tilapia into large pieces. Fill in the 4 corn tortillas with fish and salsa mixture.

serves 2ppl (about 1 filet per person)
Goes great with white rice!
