Scrambled Eggs with Squash

Ingredients
1.5 teaspoons canola oil3 tablespoons chopped onion1 teaspoon chopped garlic1/2 of a small squash, chopped1/2 - 3/4 chopped tomato2 medium eggs, beatenSalt and pepper to tasteSlice remaining tomato and serve on the side.
Directions
Saute onions in oil until soft. Add garlic and saute for 1-2 minutes. Add chopped squash and 1/2 - 3/4 of tomato, chopped. When squash and tomatoes are softened, add eggs and cook until done. Add salt and pepper to taste.

Makes 1 hearty serving
