Sweet Potato Cookies

Ingredients
1 Cup Oatmeal1/4 tsp Salt1 Cup mashed Sweet Potato1 Egg White1 Tbls Splenda1/2 tsp Cinnamon
Directions
Spray cookie sheet with cooking spray, Mix all ingredients and drop 1 heaping Tablespoon at a time, pat each cookie down a little and bake at 350 for 9 minutes for a chewy cookie (for more cooked cookie about 5 more minutes).

Makes 12 cookies (4 per serving)

    These are really good, and fast! I had leftover mashed sweet potatoes from supper last night, and I whipped up a batch of these during lunch. Mine might not be just like the recipe since my leftovers already had some minor additions, but they were good! Next time I'll flatten even more before baking - 5/21/10
