Mandarin Orange Chicken Salad

Ingredients
1/2 cup orange juice1 teaspoon canola oil1 tablespoon Worcestershire sauce1 garlic clove, sliced1 pound of boneless, skinless chicken breastsCooking spray1 10 ounce bag of romaine lettuce2 11 ounce cans mandarin oranges packed in juice, drained. (reserve 1/4 cup juice)Dressing1/2 cup light Italian dressing1/4 cup reserved mandarin orange juice
Directions
Combine OJ, canola oil, worcestershire sauce and garlic in a large bowl or large zippered plastic bag. Add chicken and marinade in refrigerator for 15 minutes

Remove chicken from marinade and broil until light brown (approx. 4 minutes on each side)

Cut cooked chicken in to cubes. In a large salad bowl, toss lettuce, chicken and mandarin oranges.

In a small bowl, whisk together italian dressing and mandarin orange juice.

Drizzle dressing over salad and toss well to coat.
