Ingredients
1 lb dried blackeyed peas, soaked overnight1 large onion, roughly chopped1 tsp tabasco sauce1/2 tsp salt1/2 tsp pepper1/2 tsp garlic powder1/2 tsp onion powder6 tbsp olive oil
Directions
Sort through the beans to eliminate any rocks and soak overnight, changing the water once. Drain the beans and puree them with the onion in a food processor until smooth. Stir in the spices and adjust them to taste. Add a dash of cayenne pepper if you like it really spicy. Heat the oil in a large pan on medium-high heat and drop the batter by ladle full to form hamburger-sized cakes. Brown thoroughly on both sides and drain on paper towels. Serve piping hot with sour cream or plain yogurt, if desired.

Makes approximately 20 fritters.

Really lovely recipe but I prefer them pan-seared then baked as it cuts down on the amount of oil required - 5/21/12
