Asparagus and Surimi Seafood Soup

Ingredients
4 cups Swanson's Natural Goodness Chicken Broth2 thin slices fresh ginger or 3/4 tsp ground ginger2 cups diagonally sliced fresh asparagus1/3 cup sliced green onions, including tops3 Tbsp rice vinegar or white wine vinegar1/4 tsp crushed red pepper8-12 oz surimi (imitation crab)
Directions
Bring ginger and chicken broth to a boil in a large saucepan. Add asparagus, green onions, vinegar and crushed red pepper. Simmer 5 minutes or until asparagus is crisp tender. Add surimi and simmer 5 minutes longer or until seafood is hot. If using fresh ginger, remove and discard. Serve soup hot.
