Sweet Potato Pie

Ingredients
2 cups sweet potatoes, cooked and drained1/2 stick margarine, melted3 eggs1 cup sugar1 teaspoon cinnamon1/4 teaspoon nutmeg3/4 cup nonfat milk1 teaspoon vanilla1 9" pie shell, baked (I use my recipe)1/4 cup chopped pecans (optional, not calculated)whipped cream (optional, not calculated)
Directions
Mash together your cooked sweet potatoes with melted margarine. Whip in eggs, sugar, cinnamon and nutmeg. When well mixed add in the milk and vanilla. Pour it all into your baked pie shell and heat in the oven for about 40 minutes at 350 degrees F. It's done when the center is somewhat firmed up. Scatter chopped pecans over the pie before serving and top with whipped cream (optional).
