Reduced Fat Fajita Frittata

1/2 lb boneless, skinless chicken breast cut into strips.1 small onion1/2 medium green pepper cut into thin strips1 tsp lime juice1/2 tsp salt1/2 tsp ground cumin1/2 tsp chili powderCrisco No stick Olive Oil Cooking Spray2 C. Egg Beaters1 C. ( 4 oz) shredded reduced fat Colby-Jack Cheese
Spray the bottom of a large ovenproof skillet with Crisco no stick cooking spray. Saute chicken, onion, pepper, lime juice, salt, cumin and chili powder until chicken juices run clear.
Pour Egg Beaters over chicken mixture. Cover and cook over medium heat 8-10 minutes or until eggs are nearly set. Uncover; broil 6in. from heat for 2-3 minutes or until eggs are completely set. Sprinkle with cheese. Cover and let stand for 1 minute until cheese melts.
Cut into 8 "pie" slices. Serves 8.
