Egg White & Vege Omlette

Ingredients
6 egg whites1/2 chopped tomato1/4 diced green pepper1/4 cup diced fresh mushrooms1/4 cup shredded lowfat cheesecooking spray
Directions
Heat nonstick 10 inch fry pan over medium heat. Stir fry all veges in fry pan for about 1 minute. Pour egg whites over vegetables and stir to loosen from the pan. Continue to move the egg around the pan with the veges until they begin to turn white and harden. Move all the veges and the cooked whites to one half of the pan. Sprinkle cheese over veges and let melt. Once eggs have turned white, fold plain side over vege side and slide onto plate. Makes one very large serving or 2 small servings.
