Southwest Vegitarian Chili

Ingredients
1(14.5 oz. can) No Salt Added diced Tomatoes1.5 c beef broth1 c. black beans, rinse and drain1 c. frozen cauliflower, chopped1 c. frozen broccoli flowerettes, chopped1 pkg. Boca Meatless crumbles1/2 Pkg Low Sodium Mild Taco Seasoning2 Tbs. low fat french onion dip or sour cream1/2 c. 2% shredded cheddar
Directions
Makes 6 cups
In a 4 qt. pot combine first 6 ingredients
Bring to a boil, lower to med
Cook 8 min. or until veg. are crisp tender
Add taco seasoning, continue to cook add'l 5 min.
add chese 1/4 c at a time,stirring until combined
add french onion dip or sour cream at the end

    Sorry but beef broth won't go in a vegeterian chili!
    Change it to vegetable broth and it'll do just fine!
