Crockpot Asian Lettuce Wraps

1 pkg ground lean turkey1 large onion chopped4 ribs celery chopped8 Large Mushrooms chopped4 Med Shitake Mushrooms chopped1/2 cup Hoisin Sauce6 TBLS Lite Soy Sauce8 cloves garlic1TBLS Sesame Oil2 6oz cans sliced water chestnuts, drained, and finely chopped1/4 cup Cilantro1 Head Lettuce - divided by just the leaves
Combine Chicken, Onion, Celery, Mushrooms Hoisin Sauce, Soy Sauce, Garlic, Sesame Oil and Water Chestnuts. Cover cook on low 6 to 8 hours.
Thirty minutes before the end of cooking add Cilantro and could add Bean sprouts and Green Onion.
Server with Lettuce Leaves and additional Hoisin Sauce if preferred.
