Lemon oregano chicken

Ingredients
1 Chicken breast, cut into cubesJuice and zest of 1 lemon2 tsp dried oregano OR 1 tbsp fresh oregano1 1/2 cup brown rice, prepared1/2 cup plain nonfat yogurt (Greek preferred)1 large garlic clove, finely choppedSalt and pepper to taste
Directions
Makes 2 servings

Marinate cubed chicken breast pieces in lemon juice, zest, oregano, and a pinch of salt and pepper. Let sit at least 15 minutes and up to 2 hours.

Meanwhile, mix yogurt, garlic, and a pinch of salt. Can be made several days in advance for a more intense sauce.

Spray a sauce pan with olive oil cooking spray. Heat over medium heat and add chicken. Saute until cooked through and browned, about 8-10 minutes.

Serve chicken over rice with garlic-yogurt sauce on the side or on top.

    The chicken was very tasty. I kept it in serving size pieces and served it without the sauce or rice but with the oven roasted mixed vegetables recipe that I like a lot. This is a time saver for sure! - 1/14/09
