Sauteed Zucchini

Ingredients
1 teaspoon Olive Oil1/2 onion, chopped1 large tomato, chopped1 lb zucchini, peeled and cut into 1-inch slices1/2 green bell pepper, chopped2 tablespoons white rice, uncooked1/4 cup water
Directions
Heat oil in a saute pan over medium heat. Add onion, and cook and stir for 3 minutes. Add tomatoes, zucchini, and green pepper. Stir. Season to taste with salt and black pepper. Reduce heat, cover, and simmer for 4 minutes.
Stir in rice and water. Cover, and cook over low heat for 15 minutes.
