Healthy Senate Bean Soup

1 pound dried navy or other white beans400 gr ham, or a meaty ham bone3 med onions, chopped4 cloves garlic, minced3 celery ribs, minced.5 cup instant potato flakes.25 cup fresh parsley, mincedsalt and pepper or boullion cube to taste.3 quarts water
Makes about 14 cups.
Put dry beans and enough water to cover in pot. Bring to boil, boil 2 minutes, remove from heat, soak 1 hour.
Drain and rinse.
Use a big pot, add beans, ham bone or ham, 3 quarts water, boil, reduce, cover, simmer 2 hours.
Add rest of ingredients, salt and pepper to taste. Simmer 1 hour.
If using ham bone, take out, cut off meat, return to pot.
Serve.
I give 2 cup servings, but double nutritional info as it is figured on 1 cup servings.
