Bison Tacos

Ingredients
1 Lb. Ground Bison4 Tsp. (approx. 1/2 packet) Taco Seasoning12 Corn tortillas (2 per person)1/2 Large Onion (Finely Chopped) plus 2 Tbsp. for topping12 tbsp. (1 per taco) Light Sour Cream1/3 cup water2 Cups shredded lettuce (I use Romaine)2 Plum Tomatoes chopped (for topping)1/4 Cup shredded cheddar (for topping)
Directions
1. Saute ground bison and 1/2 large onion until cooked through.

2. Add taco seasoning and water and cook until water is absorbed.

3. Assemble tacos. Tortilla, meat, lettuce, chopped onion, tomatoes & sour cream.

*You can substitute taco seasoning for the low sodium kind. Use fat free sour cream and reduced fat cheese if you like.
