Easy Chicken Breast in a Blanket

Ingredients
2 boneless skinless chicken breasts 4 ounces light cream cheese 1 portabella mushroom, sliced in large pieces or sliced medium ones. 8 ounces refrigerated reduced-fat crescent rolls 6 tablespoons Italian seasoning
Directions
Preheat oven to 350.
Cut chicken breasts in half. Spread a layer of cream cheese about 2 tbsp. on the chicken breast, then sprinkle the seasoning on top. Cover with mushrooms. Leave croissants in a rectangle (2 croissants) and press together so it won’t separate. Roll it over the top of the chicken and wrap under as far as possible. Spray cookie sheet with non- stick spray. Bake on a cookie sheet until golden brown and chicken is done through. About 25 to 35 mins.

    Brilliant! Why didn't I ever think of doing something other than hotdogs wrapped in crescents. Now you have me thinking about tweaking this with swiss cheese and a few slices of ham to make a cordon bleu blanket. - 1/19/09
