Thai coconut Shrimp soup

4 cups low sodium chicken broth1 Tbsp ginger2 Tbsp fish sauce1 Tbsp light brown sugar1/4 tsp Asian Chili sauce1 C instant brown rice1 C light coconut milk1 C sliced mushrooms1 red bell pepper, sliced into thin strips1 C sugar snap peas12 oz large shrimp2 Tbsp lime juice1/4 c chopped scallions
In a large pot, bring broth, ginger, fish suace, sugar and chili sauce to a boil. Add the rice and cook for 5 minutes. Add the coconut mil, mustrooms, pepper slices and peas; reduce heat and simmer gently for 2 minutes. Add the shrimp and simmer until cooked through, 2-3 minutes. Remove from heat and stir in lime juice; ladle into bowls and top with scallions.
