Warming Ginger Soup

Ingredients
Ginger Root, 2 tbsp.Leeks, 1 leek chopped1/2 parsnip, cut in small piecesChicken Broth, 2 cup (8 fl oz) Water, tap, 2 cup (8 fl oz) *Extra Virgin Olive Oil, 1 tbsp Paprika, to taste (optional)Dry White Wine, 8 fl oz
Directions
Grate Ginger and saute in heavy saucepan with leeks in olive oil until leeks are wilted. Add Parsnip, saute for another 5 to 6 minutes. Add wine, broth and water, and bring to a boil. Reduce heat and simmer for 15 minutes. Add paprika to taste.
