This was good. Next time I will add some green pepper to it. I used brown minute rice, and found that I had to let it cook a little longer than 5 minutes to get the rice tender. - 1/30/09

Really good, added some frozen sweet corn to it and my husband had some tortillas of course. - 1/29/09

The cheese made this a delicious recipe. I used beef broth instead. - 1/16/09

So easy to make. I ate one night and then my husband and I ate it again the next night, and I usually hate leftovers. - 1/16/09

I made this last night for my husband and myself. It was delicious! And super easy to make too! My husband isn't even on a diet and he really liked it too. We added a little tabasco sauce though cause we like things a little spicy. I did not see a need to use the oil and used 1 1/2 cups broth. - 1/15/09

I made this for my husband and I and we loved it. I added red kidney beans and I only had white rice so used that, it was awesome very tastey and also better left over! - 1/14/09

This looks like a good recipe, but I have to say that I cannot FATHOM how one serving could have 345 calories. Could this be for the whole recipe? Seems high to me. - 1/14/09

I'm not sure- the ground beef was pretty high in calories. I remade it using 93% lean ground turkey, omitted the oil and used a 15 oz can of salsa & a 1/2 cup ff cheese. The calorie content is about half, and it's still yummy. It's saved/shared as Mexican sloppy Joses. Hope you enjoy : )
