Slow cooker pork roast with sauerkraut and apples

1 1/4 lb pork roast1 tablespoon olive oil1 medium onion, sliced into rings2 cloves garlic, minced3 cups sauerkraut, drained3/4 cup apple juice1 1/2 teaspoons caraway seeds1/4 teaspoons dried thyme1/4 teaspoon salt1/4 teaspoon pepper1 cup unpeeled sliced red apple
In skillet, brown poast in oil.
In slow cooker, place 1/2 of the onion, garlic, sauerkraut, apple juice, caraway seed, thyme, salt and pepper. Add roast and then cover with remaining ingredients.
Cover and cook on low for 6-8 hours.
Serves 6

I made this in a pressure cooker since I was pressed for time. I also left out the caraway because I don't like them and peeled the apple and chopped it together with the onion. Even my husband who isn't keen on fruit or kraut thought it was good! (I told him what it was after he ate it!) - 6/6/11
