Amy's Fat-Free Mushroom Gravy

Ingredients
8 oz baby portabella mushrooms, finely diced2 cups water OR salt-free, fat-free vegetable broth2 tbsp flour1 tsp garlic powder (or 3 fresh gloves, finely diced)1/2 tsp salt, or to tastedash black pepper, or to taste
Directions
Sauté diced mushrooms (and fresh garlic, if using) in a dry non-stick pan for a couple of minutes. Sprinkle in flour and mix well. Continue to cook for another 30 seconds. Add salt, pepper and garlic powder (if using). Add 2 cups water/broth and stir. Allow mixture boil, stirring often, until liquid is quite dark and mushrooms are completely cooked,.
Put mixture into a blender or food processor and blend until moderately smooth. Serve hot over your favorite comfort foods.

Makes about 16 two-tablespoon servings.
