Italian Chicken Dinner

6 boneless chicken breasts2 tbsp olive oil1 head cabbage, but into 6 wedges1 14 oz can diced tomatoes1 green pepper, chopped1 small onion, chopped1 tsp minced garlic1 cup mozarella cheese
In a 12 inch skillet, brown chicken in heated oil over medium heat about 15 minutes, turning as necessary to brown. Drain off fat.
Place cabbage wedges around chicken. Combine undrained tomatoes, green pepper, onion and seasonings and add to skillet.
Bring to a boil, reduce heat. Cover and simmer 35 to 40 minutes or until chicken is tender. Sprinkle cheesse over all. Cover and cook about 2 minutes or until cheese is melted.
Makes 6 servings, approx 461 calories per serving (5 grams fat, 21 grams carbohydrate, 10 grams fiber)
