Very Berry Jam

6.5 C frozen strawberries1.5 C frozen mixed berries (blueberries, raspberries and blackberries)1/4 C Splenda Sugar Blend for Baking

This recipe made me five 8-ounce jars of jam.

Most jam recipes I have read dealt with fresh fruit. Since it's the middle of the winter, and I have frozen fruit, I gave this a try and was pleased with the outcome.

I threw all the fruit into a pan over low heat, letting the berries release their juices and soften. This takes somewhere in the ball park of 30 minutes, give or take.

After that, I put the sugar into the mix, stirring occasionally and rising the heat to medium to bring the mixture to a boil. Using a candy thermometer, I monitored the heat and the mixture until it reached the temperature of 220.

I poured the mixture into sterilized jars and boiled them for 10 minutes before pulling them out and letting them cool. Allow plenty of time (upwards to 24 hours) for the cooling process, then enjoy.
