Chicken Gumbo

2 tbsp olive oil2 tbsp margarine1 medium onion, chopped1 red pepper, chopped2 celery stalks2 garlic cloves3 skinless boneless chicken breasts, cubed3 tbsp whole wheat flour2 x 10 cans chicken broth reduced sodium7 1/2 oz can diced tomatoes1 tsp sea salt1/2 tsp pepper
In a large pot, melt margarine and olive oil. Add onion, red pepper, celery and garlic; saute for 5-6 minutes
Add chicken and saute until chicken is cooked through. Stir in flour, continue cooking, stirring often, until the chicken starts to brown. Stir in broth, tomatoes, sea salt and pepper. Cook on medium heat until gumbo is bubbly and hot.
Serves 6 1 cup portions
