Stuffed Tomato Basil Chicken

4 Boneless, Skinless Chicken Breasts2 tbps Basil (dried)4 Slices Large Tomato4 Thin slices Fresh Mozzarella
In a bowl mix 1/2 White wine, 2 tbsp extra virgin olive oil, 1/2 tbsp garlic (minced), and a couple squirts of lemon juice. Set aside.
Cut each Chicken Breast in half, but not all the way through (like a butterfly). In a baking dish pour half of the white wine marinade set aside. Then place chicken in the baking dish and pour the rest of the marinade on top. Sprinkle the chicken with basil (1/2 tbsp for each breast). Place fresh tomato slices on one half of the chicken and then place the fresh mozzarella slices on top of the tomato slices. Fold chicken back in half, secure with a toothpick if desired. Place in oven at 375 degrees and cook for 15 minutes on each side.
