Garlic Chicken Pasta with Prosciutto

Ingredients
2 Tbsp. extra-virgin olive oil1/4 c. minced garlic5 roma tomatoes, seeded and chopped4 oz. prosciutto, diced4 chicken breasts, grilled or sauteed, diced2 Tbsp. butter1/4 c. dry white wine1/2 c. fresh basil, cut into thin strips3/4 lb. linguine1/2 c. grated Parmesan3 roasted jalapenos, peeled, seeded, diced2 roasted red peppers, peeled, seeded, diced
Directions
Cook the pasta according to package directions.

Meanwhile, heat oil in a large skillet and saute garlic until soft and light brown. Add tomatoes, prosciutto, chicken, butter, and wine; saute for about 5 to 10 minutes. Add basil, and saute another 5 minutes.

Combine pasta, chicken mixture, jalapenos, red peppers, and parmesan in a large bowl, and toss to combine. Garnish with fresh chopped basil if desired.
