Slow Cooker Chicken Fajitas

Ingredients
2 large red bell peppers, sliced2 large green bell peppers, sliced1 large onion, diced2.5 cups of salsa2 tablespoons of flour1-2 packets of fajita seasoning (depending on how spicy you want it)2 pounds of (raw) boneless, skinless, chicken breast, sliced into stripsspicy chili beans (if desired)
Directions
Slice chicken into thin strips. Mix flour and fajita seasoning together. Coat chicken with mixture. Add to Crockpot. Slice peppers into thin slices and add to Crockpot. Add diced onions and salsa as well. Add chili beans if you desire. Cook on low for 4-8 hours or on high for 3-4 hours. Wrap in a flour or corn tortilla and add a little fat free sour cream. (You may serve on top of brown rice as well). (Note..Calories will increase with choice of tortilla or rice...also this recipe may serve up to 8) (Also, I think that the nutrition calculator is a bit off on the calories)

    It was amazing! I adjusted the recipe by not adding the salsa b/c my kids don't like it as much as I do. I used only 1/3 packet of the fajita season. packet and 1 can of beans to lower the sodium and used whole wheat tortillas, topped with low-fat shredded cheese and the family enjoyed it!     Hey folks, this looks really good. Will be using it this week. REMEMBER...If you have an outside plug/outlet you can plug the crock pot in outside...keeps the kitchen COOL!! Do set a timer in the house to remind you when to go check it as you won't smell what is cooking!! - 6/28/09
