Directions
2 1/2 lb. beef chuck roast2 Tbsp. Extra Virgin Olive Oil1/4 tsp. onion powder3/4 tsp. beef bouillon (Herb Ox)1/2 tsp. garlic salt4 c. water1 large onion, chopped8 cloves garlic, minced
Add olive oil, onion powder and 1/4 tsp. garlic salt to a large frying pan and heat. Sear beef on all sides. Put water, bouillon, and remaining garlic salt into crockpot and heat. Place beef (and the now-flavored oil) into the crockpot and cook on high for 4 hours or Low for 6-8. Add onion and garlic during the last hour of cooking. If you add them earlier, they will absorb the salts and the meat won't have as much flavor.

OH MY GOSH!!! The best pot roast I have made to date! It was falling apart. The only extra thing I did was to add a bit of corn starch to make a thicker gravy. My whole family LOVED IT! Thanks!
PS. I served it with my mashed potato recipe...try it if you get the chance! - 2/10/09

Thanks. Falling apart is exactly how my family prefers it. Gravy is something we've had to cut out for now. Mashed potatoes on the other hand...
